For my Instructional Media class (which has a new instructor who is MAHvelous) we're actually going to her "day-job" at a local career center so she can show us assistive technology/programs/etc.
AND
we get to perform a reading and mix in our own sound effects/soundtrack/etc!(We are doing "The Caterpillar's Voice" found here http://www.storiestogrowby.com/stories/caterpillar_africa_masai.html)
The class is really cool, the instructor has already showed us how to do stop-motion animation and other techniques to make learning more interactive for the students without blowing a lot on materials (plus, you can team-teach with a computer/graphic arts teacher or cooperate with a career center and have them do the editing, etc. for your class projects).
You have to have someone take pictures of you - I want to see you guys! :)
