Two weddings and some errands

the bride and groomYesterday I went to two wedding celebrations and did some errands and that was about all I got done aside from a couple of naps. The wedding stuff was great, though. At 3 there was a casual back-yard wedding of a co-worker out in Livonia, followed by margaritas and some fabulous Mexican food. After that I headed to Pittsfield Grange Hall for Contra dancing to celebrate the wedding of Neil Epstein and his lovely bride, Elisabeth Ashman. The wedding is actually today, but they were hoisted up on chairs last night, which was the *important* part, I think. ;)

I took a favorite no-bake cookie to contribute to the potluck food at Neil and Elisabeth's celebration. I only made a half recipe, and they went fast. Here's the full recipe, if you want to try it.

White Chocolate and Peanut Butter Krispies

Ingredients:
    2 1/2 lbs white chocolate
    1 C peanut butter (creamy)
    3 C peanuts
    3 C miniature marshmallows
    3 C Rice Krispies

Mix the white chocolate and the peanut butter, and microwave until smooth, stirring every 30 seconds. --Do not let it get warm!

Fold in the peanuts, then the marshmallows, then the rice krispies.

Drop in spoonfuls onto wax paper, freeze for at least one minute, until no longer soft. (I put the wax paper on cookie trays and put the whole trays in the freezer overnight.)

(Freeze to preserve.)
